Ginger Turmeric and Chia Seed Tonic Drink

Personally, I like this drink hot without the soda. It is sort of very soothing to the throat and I usually feel rejuvenated as soon as I finish the drink. Perhaps it is the heat from the pepper and ginger. It is always good to use black peppercorns when making drinks with turmeric. The peppercorns help the body assimilate the qualities of the turmeric!

3cm ginger, peeled and coarsely chopped

2cm peeled fresh turmeric

Honey for sweetening

50 ml freshly squeeze lime juice

2 teaspoons black peppercorns

750 ml water

1 tablespoon chia seeds

Club soda

Ice cubes

Thyme sprigs (for serving)

METHOD

  1. Place ginger, turmeric, honey, lime juice, black peppercorns, and water in a blender until smooth.
  2. Strain through a fine-mesh sieve into a large bowl. Stir in chia seeds and let sit until seeds begin to swell, 8–10 minutes.
  3. Divide tonic among ice-filled glasses. Top off with club soda and garnish with thyme sprigs, if desired.

NOTE: Tonic can be made 1 day ahead and kept refrigerated.  Stir well before adding the soda.
