
Spicy Minced Lamb Pizza
This spicy lamb pizza, which is like the Turkish Lahmacun, is a must try. If you don’t like lamb, you can substitute it with other kinds of meat. You can serve this pizza with a salad on the side or even lemon wedges or pickles. Besides onion slices, you can also sprinkle with chopped parsley or mint leaves too. Instead of cheese, you can also break an egg onto the minced meat and bake the pizza!
TO MAKE THE PIZZA DOUGH
500 g bread flour
1 sachet instant yeast
10 g salt
15 g melted Q.B.B. Pure Ghee
270 ml milk or water
TO MAKE THE LAMB TOPPING
1 tablespoon Q.B.B. Pure Ghee
1 large onion, finely chopped
5 garlic cloves, finely chopped
2 tablespoons finely chopped mint leaves
2 tablespoons finely chopped parsley
120 g diced tomatoes without seeds
1 red capsicum, seeded and diced
1 green capsicum, seeded and diced
1 teaspoon chilli powder
1 teaspoon cumin powder
1 ½ teaspoons salt
500 g minced lean lamb
OTHER INGREDIENTS
2 egg whites, lightly beaten
Choice of grated cheese topping (optional)
1-2 onions, sliced
METHOD
- TO MAKE THE PIZZA DOUGH, combine flour, yeast and salt together in a large mixing bowl. Stir in the Q.B.B. Pure Ghee and milk or water. Mix well to form a soft dough.
- Turn the dough out onto a floured work surface. Knead for about five minutes, until smooth and elastic.
- Transfer to a clean bowl, cover with a damp tea towel and leave to rise for about one and a half hours or until doubled in size.
- When the dough has risen, knock it back, and then knead again until smooth. Roll into a ball and set aside for 30 minutes to 1 hour until risen again.
- In the meanwhile, TO MAKE THE LAMB TOPPING, heat Q.B.B. Pure Ghee and sauté the onion and garlic till aromatic.
- Remove from heat and cool it.
- Place the rest of the ingredients in a mixing bowl.
- Transfer the sautéed onion and garlic to it. Combine all the ingredients well.
- Preheat the oven to its highest setting or 220°C.
- Divide the dough into 4 balls and roll each one out onto a lightly floured work surface until 20 cm in diameter. Alternatively, you can roll it into oval shapes too.
- Brush the rolled dough with egg white.
- Divide the prepare filling into 4 portions and spread each portion over each of the rolled dough, leaving 1-2 cm empty space round the edges.
- Sprinkle with cheese if desired.
- Place on greased baking trays and bake for 20 minutes or until the dough turns golden brown and the minced meat is cooked.
- Sprinkle with sliced raw onion and serve. This is optional but it is a good combination with the minced lamb.
